Creating a program
Enter the program mode by pressing and holding the ENTER button down for 5 seconds. The unit will beep once before
entering the mode. The unit will automatically exit the programming mode after 10 seconds of inactivity.
The display will show “COOK TEMP SETPT XXXF”. Press ENTER, the set point value will begin to flash, then UP or
DOWN to change the value to the desired set point. The set point is adjustable between 100F to 350F (37C to 176C). Press
ENTER again to store the value. The set point will stop flashing and will be stored. Press UP to move to the next parameter.
The display will show “COOK TIME XX:XX”. Press ENTER and the cook time will begin to flash. Use the UP arrow to
increase the minutes and the DOWN arrow to decrease the hours. The time is adjustable up to 24hrs. Press ENTER again
to store the value. The cook time will stop flashing and will be stored. Press UP to move to the next parameter.
The display will show “HOLD TEMP SETPT XXXF”. Press ENTER and the set point will begin to flash. Use the UP or
DOWN arrows to increase or decrease the set point. The holding temperature is adjustable between 100F to 350F (37C to
176C). Press ENTER again to store the value. The holding temperature will stop flashing and will be stored. Press UP to
move to the next parameter.
The display will show “PROBE TEMP SETPT XXX”. Press ENTER and the set point will begin to flash. Use the UP or
DOWN arrows to increase or decrease the set point. The probe temperature set point is adjustable from 100F to 350F and
OFF. Press ENTER again and the probe temperature set point will stop flashing and will be stored. When a probe
temperature is selected, this will override the cook time. The cabinet will cycle at the desired cook temperature until the food
probe reaches it set point. Press UP to move to the next parameter.
The display will show “HUMIDITY SETPT XX”. Press ENTER and the set point will begin to flash. Use the UP or
DOWN arrows to change the set point. The humidity set point is adjustable from 0 to 10. Zero being off, no extra humidity
will be added to the cabinet and 10 being the max. Press ENTER again and the value will stop flashing and will be stored.
Press UP to move to the next parameter.
The display will show “STORE MENU X”. Press ENTER and this value will begin to flash. Use UP or DOWN to change
this value. This will be the number used to identify the program when recalling it. The program can be stored under numbers
1 through 16. This allows for 16 different programs to be stored in the unit. If 0 is selected the program will not be stored.
Press ENTER again and the value will stop flashing and will be stored.
Press UP or DOWN to review or change the settings. Wait 10 seconds and the control will exit the programming mode.
Operation
Stored programs can be recalled by pressing RECALL, then UP or DOWN to the desired stored program. Valid locations
are only 1 through 16. Zero location is not stored. Follow the instructions in the Creating a Program section to create a
program.
Once a program is recalled, the unit will begin to preheat to the set cook temperature. This is indicated by the blinking
Pre Heat LED on the front panel. The display will show “PREHEAT” followed by the current cabinet temperature. Once the
cabinet reaches the desired cook temperature the unit will beep and begin the cook cycle.
If the food probe is selected, the display will show the food probe temperature. The Food Probe LED will light during this
cycle. Once the food probe temperature reaches the desired set point, the cook cycle will end and the unit will switch to the
hold mode.
If the food probe is not selected the display will show the remaining cook time and the cabinet temperature. The Cooking
LED will light during this cycle. When the cook timer counts down to zero the cook cycle will end and the unit will switch to
the hold mode.
Once in the holding mode, the Hold / Ready LED will light and the display will show a timer counting up from when the
hold cycle began.
During any of these modes, press and hold the UP arrow key to see the current humidity level in the cabinet.
