1 Tbsp. pepper
1 Tbsp. seasoning salt

•Cuttomatoesintoalmost

•Mixflour,salt,pepperandseasoningsaltinonebowl.
•Mixeggsandmilkinanotherbowl.Dipeachtomatosliceintothemilkmixture,
then into the flour, back to the milk and then to the flour again, coating well.
•Heatoilinadeepfryerto350°Fandaddbatteredtomatoslicesafew
at a time, and cook for 5 minutes or until golden brown.

•Combinealltheaboveingredientsandmixthoroughlytocreatebatter.
•Inthedeepfryer,heattheoilto350°F.
•Putbatterinfunnel(besuretocoverholewithonefinger),then,holdingthefunnel
over hot oil (be careful of hot oil!), release some of the batter in a circular motion,
criss-crossing a couple of times to form one funnel cake.
•Thefunnelcakewillrisequicklyandexpand-sobecarefulhowmuchbatter
you use.
•Cooktolightgoldenbrownandfliptocookonotherside.
•Removefromoilandplaceonpapertowels.
•Sprinklewithpowderedsugarandservewarm.

Vegetable oil for frying
1 cup all-purpose flour

1 tsp. vanilla extract
4 eggs, at room temp.
•Inthedeepfryer,heattheoilto350°F.
•Combinetheflour,sugarandnutmeg,andsetaside.
•Inamediumsaucepanheatwaterormilkovermediumheat.Addthebutter
and salt and whisk until butter is melted. Add the vanilla and mix. Then add
flour mixture.
•Stirbrisklywithawoodenspoonuntilmixturereleasesfromthesidesofpan
and forms a ball. Remove from heat and beat until slightly cool.
•Addeggs,oneatatime,beatingwell.Using2tablespoons,shapedoughinto
an oblong shape and drop into hot oil.
•Fry3or4atatime,turningbeignetsastheyrisetothesurface.Fry3to4
minutes, until golden brown.
•Drainonpapertowelsandsprinklewithsiftedconfectioners'sugar.

•Tomakechurrodough,heatwater,margarineandsalttorollingboilin3-qt.sauce-
pan; stir in flour.
•Stirvigorouslyoverlowheatuntilmixtureformsaball,about1minute;remove
from heat.
•Beateggsallatonce;continuebeatinguntilsmoothandthenaddtosaucepan
while stirring mixture.
•Spoonmixtureintocakedecorator’stubewithlargestartip.
•Squeeze4”stripsofdoughintohotoil.Fry3or4stripsatatimeuntilgolden
brown, turning once, about 2 minutes on each side. Drain on paper towels.
•Mixsugarandcinnamon;rollchurrosinsugarmixture.
