Ingredients
500g mixed blackb
erries, redcurrants,
raspberries and stra
wberries
250g caster sugar
juice of ½ small lem

splash of water
Method
1. Place all the
ingredients in a t
hick-bottomed sauc
epan. Bring to
simmering point, t
hen remove from th
e heat and allow to
cool.
2. Blend the frui
t mixture using a h
and blender, then p
ress it through a
sieve to create a smo
oth purée.
3. Set the timer o
n your ice cream m
aker for 25 minute
s. Pour the cooled
mixture into the pre
-chilled freezer bow
l with the paddle ru
nning and
leave to freeze-churn
.
4. To achieve a f
irm-textured sorbet
, place the bowl of
sorbet in your
freezer for a further
30 minutes or so.

Method
1. Pour the cream
, egg yolks and sug
ar into a saucepan a
nd place over a
medium heat, stirr
ing frequently to
prevent the mixtur
e burning.
Gently bring to the
boil, then take off
the heat and allow t
o cool.
2. Stir the crème
de menthe (or pep
permint extract) an
d the chocolate
pieces into the mixt
ure.
3. Set the timer o
n your ice cream m
aker for 25 minute
s. Pour the cooled
mixture into the pre
-chilled freezer bow
l with the paddle ru
nning and
leave to freeze-churn
.
4. If you prefer a
firmer consistency
, place the bowl of ic
e cream in your
freezer for a further
30 minutes or so.
