toencloseeachsteak.Placesteakincentreofeachpastysquareandfoldovertocompletely
enclose.Sealseamswithalittlewaterandbrushtopwithbeateneggyolk.Placebackonlowrack
inthehalogenovenandcook420°C(215°F)for15minutesoruntilgoldenbrown.

oven.Cookat320°C(160°F)for1hour.Turnmeatandcookat350°C(175°F)forafurther
40minutesforrare,50minutesformediumor1hourforwelldone.

½ cup soy sauce

¼cupofsakeordrysherry

• Trimexcessfat,removetipsfromchickenwingsandpatdry.
Placewingsinabowl.Combinesoysauce,garlic,ginger,
sakeordrysherry.Pourmixtureoverchickenwings.Tosswell,
coverandallowtomarinadefor3hours,turnchickenwingsoveroccasionally.Placechickenwings
onhighrackinthehalogenovenandcookat350°C(175°F)for10minutes.Checkprogress,turn
ormovewingsasnecessary.Cookforafurther8to10minutesuntilgoldenbrown.

• Cleaninsideofthechickenandremoveexcessfat.Peelandchoponion.Addtopanandlightly
fryinbutteruntilgoldenbrown.Addmushroomsandfryforafurtherminuteortwo.Mixinbread
crumbs,salt,pepper,parsley,lemonzest,marjoram,nutmegandbeatenegg.Putstuffinginto
chickenandclosetheopeningandsprinklesaltandpepperoverchickenandrubintoskin.Place
chickenonlowrackinhalogenoven.Cookat163°C(325°F)for20minutes.Turnandbakefor
another20minutesafteraddinganypotatoestobecooked.Turnandbakeforfinalapprox
20minsuntilchickenistenderandgoldenbrownallover.
GRAVY
• Takescrapsandjuiceplusalittlefatfromyourbowl,add1tbspofflourandstirinapanoverheat.
Slowlyadd1½cupsofstockmadefromchickenstockcubeandmushroomstalks.Cookgravy,
stirringcontinuously,untilboiling.Addsaltandpeppertotaste.

• Marinadethewholefilletsteakwithgarlic,saltpepperandredwineinacovereddishfor4hours,
turningoccasionally.Removethemeat,keepthemarinade.Placethecarrots,lemonandorange
rinds,onion,parsleyinsomefoilpaperasabedandaddthemeat,wrapsecurelysoallopenings
areclosed.
• PlaceonlowrackinthehalogenOvenandcookfor30minutesat375°C(190°F),turnmeat
over,resealfoilandcookforafurther30minutes.Removemeatandallowtorest.Addthe
remainingmarinadetoafryingpantoalowheat,stirincreamandsimmerfor1minute.Serve
overslicedmeat.
