KEBBE MAKING
1. Put the minced meat to make kebbe outer layer into tray. Place a bowl under the grinder head.
2. Plug the unit in and switch on the unit by pressing the ON button.
3. Use the pusher to pull down the minced meat into the grinder head.
4. Switch off the unit by pressing REV/OFF button when the sausage is of required length. Cut off the sausage with a kitchen knife by the kebbe attachment.
5. Cut the sausage into cylinders of desired length (fig.11).
6. Stuff the cylinders with filling and seal the ends.
7. Deep-fry Kebbe.
8. After you finish, unplug the unit.
RECIPES
Kebbe
Ingredients:
Beef fillet – 500 g
Mutton fillet – 500 g
Bulgur – 250 g
Onion – 200 g
Pine nut – 100 g
Olive oil
Salt, spices
Soak bulgur in room temperature water for 15 minutes. Then pour rest of water out and squeeze bulgur. Chop beef and mutton fillet, chop half of
onions. Dice finely the rest onions. Assemble a meat grinder according to user manual and set 5 mm disc. Mince meat with the meat grinder,
divide minced meat into halves. Mince the 1st part of ground meat with coarsely chopped onions one more time. Add there bulgur, salt, spices and
mix until smooth. Take the 2nd part of minced meat, add there pine nuts, salt and spices and fry with olive oil until stuffing is well-cooked. Assemble
the meat grinder according to user manual, set kebbe attachment. Place the 1st part of minced meat and bulgur into meat grinder and mince. Fix
the length of kebbes manually. Stuff kebbes with fried meat and fix the edges of kebbes. Deep fry the kebbes for 10 minutes.
Cutlets
Ingredients:
Beef fillet – 400 g
Pork fillet – 400 g
White bread – 100 g
Onion – 100 g
Milk – 100 ml
Bread crumbs
Olive oil
Chop beef, pork fillet and onions. Soak white bread in water for 10 minutes and squeeze. Assemble a meat grinder according to user manual and
set 5 mm disc. Mince meat with the meat grinder, onion and bread with the meat grinder, add salt, spices and milk. Mix thoroughly. Make 1.5 cm
thick cutlets of minced meat and roll them in bread crumbs. Fry the cutlets with olive oil until they are golden brown. Then cook them till ready in an
oven.
