Pork, Cider and Apple Pies
Makes 8 mini pies
Ingredients
Oil, 1tbsp
Onion, small, peeled and chopped, ½
Bramley apple, peeled, cored and chopped, ½
Cooked pork, shredded with 2 forks, 100g
Cornflour, ½tbsp
Dry cider, 3tbsp
Salt and pepper
Puff pastry, 500g
Milk to brush
Method
1. Put oil in a pan, add onion and apple and cook until soft
2. Add the pork, cornflour, cider and seasoning. Remove from the heat.
3. Roll the pastry to 3mm thick and using the larger side of the base/lid cutter cut eight
rounds of pastry for the bases and using the smaller side of the cutter eight tops for
the pies
4. Place a base on top of the pusher and gently press the base into place
5. Repeat this process for the remaining seven bases
6. Spoon an eighth of the mixture into each base
7. Place a top circle over the filling and brush with milk and use the pusher/ lid shaper
to press down and shape the pastry lid.
8. Close the lid of the machine.
9. Cook for 10 minutes and using a heatproof spatula check that base is fully cooked.
If not, cook for a further 2-3 minutes
Beef and ale pie
Makes 8 mini pies
Ingredients
Oil, 1 tbsp
Rump steak, cut into small cubes, 150g
Mushrooms, sliced, 50g
½ an Onion, peeled and chopped
Flour, 1 tbsp
Salt and pepper
Ale, 150ml
300g short crust pastry
300g puff pastry
Milk to brush
Method
1. Heat the oil in a pan
2. Mix beef, mushrooms, onion, flour, salt and pepper in a bowl
3. Add to the pan and brown the meat, add the ale
4. Reduce heat and cook for 60 minutes. Remove from heat and allow to cool.
5. Roll the short crust pastry to 3mm thick and using the larger side of the base/lid
cutter cut eight rounds of pastry for the bases.
6. Roll out the puff pastry and using the smaller side of the base/lid cutter cut eight
rounds for the lids
7. Place a base on top of the pusher and gently press the base into place
8. Repeat this process for the remaining seven bases
9. Spoon an eighth of the mixture into each base
10. Place a top circle over the filling and brush with milk and use the pusher/ lid shaper
to press down and shape the pastry lid.
11. Close the lid of the machine.
12. Cook for 15 minutes.
13. Using a heatproof spatula ease out one pie and check that the base is fully cooked.
If not, cook for a further 3-5 minutes
