LOADING ThE ChARCOAL
1. Open the front door of the oven and take out the grill rack(s)
2. Load the charcoal into the oven. The amount of charcoal will depend on the size of the oven.
IMPORTANT:
When handling the grill racks, insulated gloves must be used to prevent burns. Take care not to touch the
oven without protection for your hands.
LIGhTING ThE ChARCOAL
Before lighting:
Bring the charcoal together with the poker so that it is piled up in the center of the oven and is not flat. This is so

that when it is lit, it catches fire quickly and burns evenly.
Completely open the upper and lower vents.

Use a fire starter (parafin/sawdust stick) to make 3 lighting points in the piled charcoal- Place 1 in the middle of the
charcoal and the other 2 at the sides.
IMPORTANT:
Flammable liquids like alcohol, gasoline or similar must not be used to light the charcoal. This
is very dangerous.
After the fire starter has been lit, close the door and follow the instructions on the next page.
The oven will be loaded twice a day, once for the lunch service and once for the dinner service. See the table below for
the approximate quantities for each charcoal load as well as the approximate total daily charcoal usage.

FIRST LIGhTING:
It is very important that the lighting process lasts at least one hour for the first time.
SECOND AND SUBSEQUENT LIGhTING:
The lighting process should not take longer than 45 minutes.
