PREPARING ThE OvEN FOR COOKING
STEPS TO TAKE BEFORE OPENING ThE DOOR
Wait between 30 and 45 minutes (depending on the oven model) after lighting
•
to be sure that the oven is well lit.
After this time, close the lower vent and keep the upper vent open.
•
Wait Between 5 and 10 minutes. The door to the oven can then be opened and
•
you can make sure that the flames have disappeared.
*IT IS vERY IMPORTANT TO MAKE SURE ThAT ThE ChARCOAL IS BURNT DOWN TO ITS EMBERS. ThE
ChARCOAL ShOULD BE A REDDISh COLOR AND ThERE ShOULD BE NO PIECES OF BLACK ChARCOAL
LEFT.
Flatten the charcoal with the poker and spread it so
that it is evenly distributed. We recommend leaving
6 inches at the back of the oven.
READY TO COOK
Now place the grill rack(s) inside the oven, sliding
it/them along the grill rack runners. *Two grill racks
can be used at the same time.
* AT ThE TOP:
Dishes au gratin, Roasts, Pizzas,
Bread
* AT ThE BOTTOM:
Meat, Vegetables, Fish
*ThE hEIGhT OF ThE GRILL RACK ChOSEN DEPENDS ON ThE TYPE OF FOOD BEING COOKED
The correct location is as follows:
At the top of the oven for dishes au gratin, roasts, pizzas and bread.

At the bottom of the oven, as close to the charcoal as possible, for grilling meat, vegetables and fish.
•
WhILE ThE OvEN IS BEING USED, ThE UPPER vENT MUST BE OPEN BY AT LEAST 3 OR 4 POINTS AND ThE
LOWER vENT MUST REMAIN ShUT AT ALL TIMES.
If smoke is coming out of the oven door (for example, during high production cooking), the upper vent should be opened
until the smoke disappears.
