GRILL RACKS
We recommend taking all the cast iron gratings out and cleaning
them with a wire brush at least once every two weeks. This is
important for maintaining freedom of movement between the grill
racks, enabling good air circulation inside the oven.
FIREBREAK
The firebreak must be cleaned once every two weeks. The
deposits at the ends can be cleared by hitting them with a wooden
spatula.
NOTE:
never use water to clean the inside of the firebreak.
This will prevent the soot from compacting and will prevent
smoke from passing through.
DOOR FRAME (vERY IMPORTANT)
Keep the
Fixed FRAme
and the
movABle FRAme
of the oven
door clean in order to maintain a tight door fit. (See Figure C).
Pay particular attention to the part of the
movABle FRAme
closest to the inside of the oven where it is very easy for fat to drip
during cooking. (See Figure D).
NOTE:
This is very important as the tighter the door closes,
the less smoke will escape through it, which results in less
consumption of charcoal.
We recommend a spatula for cleaning (or a carpenter’s
chisel).
note:
Grill Grates need to be replaced approximately every 4-6
months.
