Headspace: 1/2 inch
Time: 8 minutes / high pressure setting
Ingredients
3 1/2 -4 pounds ripe, sweet berries with uniform color.
Any of the following varieties are recommended: Blackberries, blueberries, currants,
dewberries, elderberries, huckleberries, loganberries, mulberries, and raspberries.
Directions
Wash 1 or 2 lbs of berries at a time. Drain, cap, and remove stems, if necessary. Heat berries
in boiling water for 30 seconds and drain. Add to jars. Next, add 1/4 cup hot juice, or water to
each jar leaving 1/2 inch headspace. Cap and seal. Place in canner with 2 to 3 inches of hot
water.
Process for 8 minutes/ high pressure setting.
